Peppers

The Piperaceae is the flowering plant that produces over 3.600 species of the pepper plant family. They are classified in 13 sub-categories. All peppers can be classified into 2 main categories: the Piper plant group (2.000 variants) and the Peperomia (around 1.600 variants). 

From the Piper nigrum plant we gain most of the known pepper kinds in our kitchens. The biggest exporters are India and Vietnam (covering almost 34% of the World production). The great variety of plants, regions and processing methods yield us green pepper, white pepper, red pepper and many other exotic variations that then can be finely grounded or used in it's raw version as a peppercorn seed (average size is 5mm).
