Practically the national snack, this sweet paste is classically paired with Spain's other culinary staple, Manchego cheese. Somewhere between an apple and a pear, the quince does not often get the recognition it deserves. But in the way of fruit, it truly has a lot to offer. Most varieties of quince cannot be eaten raw, and must first be stewed, steamed, or in some way cooked. Once exposed to heat, the white flesh of the quince transforms into a lovely pink and stays that color, making it a dynamic addition to any charcuterie board or cheese platter. With a well-balanced sweet taste, boasting definite floral notes, quince has an addictive taste we simply cannot get enough of!

Once prized for its lovely color and floral, sweet taste, quince has fallen out of fashion in recent decades. The famous pomologist, U.P. Hendrik is quoted to have mourned the fate of the quince, saying “: the quince, the ‘golden apple’ of the ancients, once dedicated to deities, and looked upon as the emblem of love and happiness, for centuries the favorite pome, is now neglected and the least esteemed of commonly cultivated tree-fruits.” Not often found state-side, quince’s renaissance is long overdue, and we’re excited to be a part of bringing back this exceptional fruit.

Known in Spain as 'Membrillo', quince paste is a solid jelly. Thick and sliceable, it’s especially popular around the Christmas season. While you’ll most commonly find Membrillo served alongside cheese, there are a hundred delightful ways to serve this versatile paste. Delicious spread on toast and sandwiches, served with cured meats, or used as a filling for pastries and cakes, you’ll even find it rolled in sugar and served as a stand-alone dessert.
