White Marrow Beans - Dry - America
A round and fat little white bean, Marrows have a creamy texture when cooked, with a flavor that many find meaty and with hints of bacon. Use them in soups and stews, they're super rich and filling. Also great with salads, tossed with oil, garlic, finely chopped onions and seasoned as an appetizer. Marrow beans hold their shape well, but they're also really good for pureeing into dips and spreads. Soak overnight in fresh water, rinse and drain.
